Cranberry-Orange Relish

Happiness is a turkey sandwich with cranberry-orange relish.

Grate a tablespoon of rind from a navel orange.  Peel and section the orange.  Grate the sections with 12 ounces of fresh cranberries in your food processor.  Stir in the grated orange peel and a cup and a half of sugar.  Serve slathered on turkey between two slices of bread (mayonnaise optional).  Refrigerate the rest for up to two weeks.

Try it.  You’ll never buy a small turkey again.

    I’ve not been as precise with the oranges and cranberries–we grind up the whole bag of berries and one orange, usually quartered with seeds removed.
    Susan Stamberg (sp?) from NPR has a great recipe for her mother-in-law’s relish–with sour cream and horseradish–and our other favorite is to mix the relish with chopped pecans and cherry jello–makes a nice congealed salad.
