A Comfort Food Phoenix

I made chicken pot pie tonight — a family favorite — and Andy took a pic for Facebook. A few friends asked for the recipe, so I figured I’d post it on the website. But since it’s my recipe, I’m going to talk to you about it, not just give you the basics.

It all started when I was little. Swanson’s chicken pot pies were a favorite dinner. Then I grew up, went to college, and started eating more fresh foods, more organics, and when I went back to try Swanson’s again, I didn’t like it anymore. Marie Callender’s was better, but still wasn’t good. One of my comfort foods wasn’t comforting anymore. Sound familiar?

Then, in a magazine one day, I found a Campbell’s soup ad with a recipe for chicken pot pie. It wasn’t quite right, so I kept messing with it, and now it’s just about perfect. So to all my friends out there who might have scoffed when I claimed that a new favorite was out there somewhere, just try my chicken pot pie recipe. And let your taste buds do the rest.
